Homemade Baked Beans
These beans are very good and they have less sugar then a lot of baked bean recipes.
Ingredients
- 1 pound dried Great Northern beans
- 1 pound smoked ham shanks (separate meat from bones and dice)
- 1/4 pound salt pork (diced)
- 1 onion, chopped
- 2 jalapenos, chopped
- 1/4 cup light brown sugar
- 1/4 cup molasses
- 1/4 cup tomato paste
- 1 tablespoon apple cider vinegar
- 4 cups chicken broth
- 1/4 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 2 teaspoons kosher salt
Directions
Heat oven to 250 degrees F.
Soak beans in a glass or plastic container overnight in water. Cover the beans with about 1 inch of cold water.
Place your bean pot or cast iron dutch oven over medium heat and put in the ham shanks (bones, skin and diced meat), onion, and peppers and cook for about 5 minutes, until the onions are soft. Stir in the tomato paste, dark brown sugar, and molasses.
Drain the beans and put them in your pot. Add the chicken broth and and bring to a boil. Add the vinegar, cayenne, black pepper and salt. Stir everything well and then cover with the lid. Place in the oven for 6 or 7 hours, or until the beans are done.
